If you are getting a whole pig and would like the two halves to be cut differently please specify in the special requests box below.

OPTION 1: Do you know exactly what cuts you would like to receive? If so, please go through the list below and check off the cuts you would like. Please note that there are multiple ways to cut each muscle on the animal, meaning if you choose one cut you may not have access to another. If there is an "OR" between two items please only choose ONE of the two. OPTION 2: No idea what cuts you would like to receive? Let us choose for you! We can cut up your animal so there is a nice variety of steaks, roasts, and ground meat. If you choose this option, please note what percentage of trim would like in either sausage or ground meat.

If you are purchasing a whole animal you will have access to any or all of the organs below. If you are purchasing half of an animal please check off which organs you would like and we will do our best to accommodate and divvy up the organs fairly.
Bones *
Depending on how you would like your pig cut, we may end up deboning a lot of the muscles. Bones are great for making stock. Bones would be cut into 1-4 inch pieces and would be bagged and frozen. Please check the appropriate box below.
Sausage
There will be a varying amount of trim produced from the animal carcass depending on how you would like your animal cut. Please note what percentages you would like in either the below sausages or ground pork. Percentages should tally up to 100%.

A mild, fresh flavored sausage. Ingredients: Pork, Pork Fat, Salt, Cumin, Mustard Seed, Marjoram, Black Pepper Please note what percentage of your trim you would like, if any, in the above sausage.
